The choice of local food in New Braunfels is amazing, and we’re here to shout about it because we love our local businesses, and we want to see every single one succeed. This month, we’re talking about Texas Bistro.
Gourmet Food in Texas?
Who knew you could find numerous gourmet dishes right here in New Braunfels? I was pleasantly surprised by the extraordinary menu options at Texas Bistro, most of which you will not find anywhere else.
Collin Champion, the owner-chef, is a food genius. He has wonderful chefs that work alongside him to create these food masterpieces. One, Antonio, was even featured on Hell’s Kitchen.
I am by no means a food critic, but I know good food when I taste it. There were many scrumptious options on the menu, and choosing one was a challenge.
I settled on the grilled chicken pecan brie sandwich … mouthwatering. My husband had pretzel-crusted trout prepared with smoked mustard-brandy cream sauce, lemon-parmesan risotto, and seasonal veggies. I know, right?! Our friend had shrimp and grits with tomato-bacon cream sauce – equally tantalizing.
Hearability
Now for the “hearability” in the restaurant. Even though there are high, open ceilings and cement floors, the acoustics are actually good. Collin invested in sound absorbing ceiling material. Those of you who have followed my blogs know that my husband has a significant hearing loss, and conversations in restaurants can be difficult. We were there during the busy lunch hour, and he was able to follow and participate in conversation easily.

I guarantee your mouth will water at this food gallery and this list of bistro and dessert cocktails, along with a wine list. They have a happy hour, too, from Tuesday – Saturday, 3 to 6 PM.
The menu is on fire with creative choices. We will definitely go back several times to enjoy them all.
